The menu features produce from the province’s forests and lakes. Falkholt’s applies equal amounts of knowledge, experience and innovation, to transform local traditions into its own award-winning cuisine.

Västsvensk Mersmak, an organisation that certifies restaurants in accordance with particular criteria, was launched in 2000 by the West Sweden Tourist Board. Its aim is to further develop the already highly-regarded cuisine of West Sweden, to help establish linkages between restaurants and producers and to provide visitors and locals with a broad range of high-quality food experiences that are well worth a detour – or a special trip.

Dalslandsmat, or Food from Dalsland, is the common name for some thirty food producers and breeders in Dalsland. The organisation publishes a special ”Food rally map”, which guides travellers to the province’s farm-gate sales, restaurants and other food producers.
