4-5 large matjes herring fillets
1 medium onion
1 teaspoon Dijon mustard
salt and pepper

Egg salad
3 hard boiled eggs
2 boiled potatoes
2 spring onions
1 tablespoon crème fraiche
2 tablespoons sour cream
salt and pepper

Garnish
Dill
Lemon
Salad greens

Matjes herring and Dijon mustard tartar
Cut the fillets into small dice. Mince the onion and combine with the herring and mustard. Season with salt and pepper. Form the mixture into small “pucks”.

Egg salad
Chop the eggs, potatoes and onions. Combine with the crème fraiche and sour cream. Add salt and pepper to taste. Form the mixture into eggs with two tablespoons.

To serve
Arrange the herring tartar and egg salad on individual plates. Garnish with dill sprigs, lemon wedges and mixed greens. Serve with Västerbotten cheese and crispbread.
