If Västergården’s cows had a choice, they would prefer to be outdoors – and they are! They also only eat grass. The result is marbled pasture-reared meat from animals that have lived a good life by the shores of Lake Vänern.
Mainland residents who want to visit Västergården’s farm shop on Dillö island, must cross at least two bridges. First Torsöbron between the mainland and Lake Vänern’s largest island, then the considerably smaller bridge between Torsö and Dillö. But the beautiful surroundings make it well worth the journey. Lake views and blooming meadows await around every bend.
Krav certified abattoir
Västergården’s cattle and their owners Madeleine Boström and Åke Andersson live in these surroundings. The animals are born here, roam the natural rolling pastures practically the whole year around, and only leave the farm when it is time for slaughter. They are then gently transported to a little abattoir without noise or stress. There the meat is hung for two weeks for a more mature result.
Västergården on Dillö island has been in the family’s ownership since the early 1700s. Today the farm is KRAV eco-certificated for obvious reasons, as Madde and Åke put it – they have never seen any reason to choose another way.
Västergård offers various fine meat cuts, minced meat and smoked beef plus the specially seasoned Dillö-burgers, basically all year round. They handle the cutting, processing and packaging themselves in an approved food facility on the farm. They also offer meat boxes to order.
Delicious bestsellers
The recipe for the Dillö-burgers was discovered by chance when Madde got a large bag of chimichurri spice from a friend and decided to find a way of using it. Today the burgers are a big-seller, both raw and cooked. During the Torsö Festival alone, which takes place on the island some years, Västergården serves thousands of freshly grilled burgers.
If you want to shop from Västergården you can, as explained, head over the bridges to their small farm shop, which is open most Saturdays and some Thursdays.
