For more than four decades and two generations, the Klemming family has harvested oysters in the Northeast Atlantic around sheltered bays and shores. The fishing is carried out with the greatest possible respect for the unique environment and the extremely species‑rich waters here.

Oyster contribute to a healthier sea and richer marine life, which is why it is of utmost importance to harvest them with knowledge and care—gently and selectively picking them while always ensuring that plenty of oysters remain on the oyster beds. During July and August, we do not harvest oysters, as it is their spawning period.

Real Oyster Fishing

The oyster fishing experience is a unique opportunity to gain deeper insight into the noble craft of oyster harvesting while also taking part in catching what later ends up on your plate.

The day begins with a boat trip from the quay out to one of our oyster beds. There, you will help with the harvesting and learn more about the fantastic food that hides beneath the surface along the Bohuslän coast. We then bring the catch back to our cozy boathouse, where we enjoy lunch together. Lunch consists of the finest delicacies from the sea’s own pantry. We welcome up to six participants per session.

Whether you choose this experience or the Saturday tour, equipment and fishing clothes are provided. What you need to bring yourself—such as warm clothing, shoes, and similar items—will be communicated at booking. Please note that accommodation and travel to Grebbestad are not included, and the age limit is 14 years.

The Saturday Tour

Nothing tastes better than food you’ve caught yourself. Saturday begins with a boat ride through Grebbestad’s beautiful archipelago to one of our finest oyster beds. There, I explain all about oysters and how they are harvested. After that, you get to pick your own oysters, which we then prepare together with other shellfish over an open fire. You simply can’t find fresher seafood than this. A true adventure for anyone wanting to try oyster fishing. Lunch consists of fresh, local ingredients from both sea and land.

We welcome private groups, but you can also book a spot as part of a group of up to fourteen people.

Ostrongården

For a truly exclusive and private experience, you have the option of renting and staying in our newly built guesthouse, which we call Ostrongården.

The main house offers two spacious double rooms, a social area with an open fireplace, and a professional kitchen for culinary experiences. In summer, there is a large outdoor kitchen where you can enjoy dinner under the open sky with views of the surrounding landscape. Ostrongården also includes a smaller guesthouse with an inviting double room. All beds come from the local manufacturer AYA of Sweden and are handcrafted to the highest quality.

Ostrongården is a first-class accommodation in a refined, minimalist Scandinavian style, with architecture designed to respect the site and its surroundings. The property is located right next to the Tjurpannan Nature Reserve, offering magnificent views from the mainland out across the archipelago toward the southwestern horizon. Why not start the day with a refreshing morning dip? Bicycles are available to borrow, and extra services—such as guided running tours—can be arranged.


Our Oysters

In the cold, clear waters off Grebbestad, two types of oysters grow—the ones we harvest and build our gastronomy around. These are Ostrea Edulis, also known as European flat oysters, and Crassostrea Gigas, the Pacific oyster. The oysters are wild and harvested carefully by experienced divers. Klemming’s oysters are sold primarily through reputable wholesalers such as Nordsjöfisk and Bergfalk, but all fishmongers and wholesalers can order our oysters.

We work to build long‑term customer relationships, and our buyers—whether large wholesalers, individual fishmongers, or restaurants—are welcome to visit us to learn more about the oysters. We are also happy to visit restaurants, for example, to train their staff.

Klemming’s Oysters are served at many of Scandinavia’s leading and most ambitious restaurants, with sustainable ingredients in focus.

Oysters, like all shellfish, are fresh products, and we handle them weekly, delivering oysters to our restaurants the same day they are harvested from the sea. The mussels we use in cooking are Scanfjord’s organically rope-grown blue mussels from Bohuslän. Scanfjord’s mussels are KRAV and MSC certified and are suitable for everything from classic wine-steamed mussels to gratins.
